How to do breakdown/dishes faster? (self.starbucksbaristas)

I’ve been working for six months and I am still really slow at a lot of things… I feel like I am holding everyone back, especially because it takes me so long to do dishes. I want to be able to say that I’m confident in doing breakdown fast.

breakdown as in the machines for closing? i often bring a dish tray or two out onto the floor, load them up, hose them down in the back, and then shove them in the dishwasher, usually prepping the next load while the first one is washing. If you have time before a load finishes, i go back onto the floor, corral any dishes i can find and then take them to the back when i have an empty dish tray. I also bring the clean dishes out to the floor on the tray because it takes less trips and you can load it up again with the dirty dishes

Spray off the gunk and chuck it in the machine; if anything is caked on, soak it in soapy water for a few loads before trying any scrubbing. While one tray runs through the machine, you can put away the clean load and spray down the dishes for the next.

i seperate by metals and plastics idk why it sorting it that way helps me go faster:
•rinse all kegs and metal lids and spoons etc, wash, sanitize
•rinse all plastic containers and lids etc, wash, sanitize
