You literally have to get them flooded and then deck scrub. There is no other way to keep it remotely clean.

That works better than mopping but still doesn’t work very well for us! Our backroom is so narrow too. We had a floor squeegee for a while that was great but I broke it RIP

Funny, we bought a squeegee and it never helped. Especially because our drains are above* the floor level by 1/4"... 😂

Newer stores (and I think newly remodeled stores) get a kind of rubberized flooring for behind the line and BOH. No more floor mats.

My store got this setup, but not the layout ... Holy shit, that looks so functional!!! Mine is a literal disaster. Two separate cold bars, two separate hot bars, separated nitro station separated cold foam stain, and separated warning station.
Everything is a long walk compared to old store layouts. I miss having everything within the steps.

i used one of the scrubbers (scrubbing broom?? i forget the name exactly) and dumped hot mop water on the floor with a cube an area at a time, then its just strength and elbow grease after that. we used squeegees and a mop to push the nasty water into the drains and mopped up the rest after <3 took at least a half hr but it does the job !
