To sell? They’re done when they’re done.
For personal consumption? Depends on the item. Moist items like loaves go faster than dryer items like bagels or croissants. I don’t usually refrigerate them when I take them home, but they last an extra 2-5 days or so, depending on the item.

3-4 ish days is generally safe depending on the item
