I’m specifically trying to get to the policy for using sick time. I was told that it had recently been changed so I was hoping to be able to get onto the legit Starbucks website to see it for myself.

No, they're considered internal documents and thus are only available from the BOH computer

Partner Hub - you should just be able to search Sick time or something. If it was updated recently, it would have been released in a Weekly Update and a new version of the Partner Resource Guide would have to be released.
Otherwise, the policy for sick time is the same as it has been for years.
