Ooooo good question. Uhhhh I’d say have your closing crew overstock as much of the CS cycle list as possible (cups lids beans etc) What I used to do when I would solo at a license store is I would set out every thing and all the containers (labeled if you want to be super clear about what you did). You can even prep chai as long as you put it in a fridge and not leave it on the counter (good for 5 days in a fridge)
But mainly stock the floor and bring out the containers/ingredients to make the things you’re throwing out. But don’t worry about actually making it unless you know for a fact it won’t go out in 24 hours. Good luck!!!
