I’m just confused. Why do people order no foam for lattes? I guess for me it’s the battle of having customers come back and complain if there’s more than two bubbles but I’m curious if anyone prefers no foam for their lattes over having foam.

I think maybe it cuz they don’t like the idea of 1/2 inch of their drink being “air” and when it melts they are short 1/2 inch of drink 🤷♀️ I don’t get it either

technically if you steam it properly the foam shouldn’t ‘melt’ too much at all

That is true! But a customer gets a drink made wrong one time and they are traumatized for life

Some people think they are getting a better deal - getting milk instead of paying for foam...
but, number ONE reason.
a few baristas make the drinks wrong a couple times and customers don't want to deal with it anymore.
order a latte and you get a dish soap quality level of cappuccino foam on it. After a couple times it's just easier to order NO foam, because chances are they end up with the correct amount of foam most of the time.
most people don't HATE a nice creamy 1/4 inch topping of foam. they hate the bubblebath pour of foam they end up with.
take a tall cup fill it with vanilla bean powder to 1/2 in below the rim. THAT is what your tall latte should weigh. try it out, you'll be shocked at how much a latte should weigh.
it's why some people have to order their mochas with no foam. because baristas get crazy on their foaming and why people post photos of their drinks online with it 1/3 down the cup and you see how much foam dissipated.
it's why they ask for SSV to test a drink every shift. It's to check to see if the people who are baring are up to the quality you'd like to see come out.

I legitimately asked us with one of my regulars one night and they said the reason that they ordered no foam in their lattes is because they're trying to get the most for their money and that us baristas are trying intentionally to screw them over by having foam. In a latte. Which is supposed to have a little bit of foam to it.

I think they're the same people who ask for no foam on their beer 🍻

It's primarily a texture thing, I think? Some folks alternatively just want ALL liquid and think they may be getting "ripped off" if there's any gap between the top of the bev and the lid. Heavy amounts of foam are also what marks the difference between a latte and a cappuccino.
There are also ppl who think no foam is healthier...? Idk where that perception comes from but whatever
I've only ordered light foam/no foam on drinks with whip bc the whip sits easier on a smoother top with less air, but that's just me.

Some people think the foam is sweet foam is added on from heavy cream. Some influencer from a. Few years ago was going on about how fattening the foam on a latte was (I think they were confusing it with VSCCF, which isn’t really that bad for you all things considered) and some people think that taking the foam off makes it more healthy.
