Heyyy transferred to a new store where nearly everyone puts leftover cold foam into a tall cup and allows it to sit as backup foam for up to an hour… is that normal? I always blend fresh foam because I find using warm dairy super nasty and an uncovered item kind of unsanitary

same! if it’s left out for more than 5 minutes (unless we know it’s going to be used with that time) it gets dumped. an hour is just plain unsanitary, at least put it in the fridge if you really must put it in a cup 😬

Nah that’s nasty. I go by: when the cold foam starts getting it’s own “cold foam” that’s when it’s time to dump. Usually only a couple minutes, but I don’t usually let it sit that long in general anyways.

I’ll save the extra for a few cars or so, but then throw it away. The store I’ve been helping at on the weekends leaves their sweet cream on the counter and they get irritated when I come by and put it away. I’m sorry, but I’m not serving warm dairy!

Oh absolutely not 🤢💀 is your store following standards for making cold foam? It’s supposed to only be poured to the 100ml line, and then you leave 1 inch off the top of the drink so there’s room for the cold foam (don’t be lazy on that, I always hated paying for cold foam and only getting like a 1/4 inch on the top before I became a barista). Unless ur making like double or triple batches there shouldn’t really be any extra like that. Cold foam is a dairy product, it’s definitely not safe to let it sit out for an hour, not to mention the foam goes flat after a few minutes so it’s basically just sweet cream at that point.

It cuts the time of blending, since once it's blended and kept in the fridge the foamy texture is kept pretty well. It was helpful when pumpkin came back for the fall and every drink wanted pumpkin foam. Now a days for my store there isn't much a need to "keep a cup".

An hour is gross. I try not to do this and make fresh each time, the max amount of time I’d let it sit would be a couple minutes. I’ll only do this if I’ve noticed a trend and have made/heard multiple cold brews being ordered in the moment. It’s almost never consistently enough of the same kind of foam being ordered so there’s really no point to doing it for me.
