This may seem insensitive, but repeat repeatedly: It’s only coffee.
If you’re short, acknowledge and behave accordingly. Manage customer expectations (“because we’re short-staffed, it might take some time”), make sure everyone is working efficiently, and just get through it. No one’s going to die. This is out of your hands.
As a shift, try to keep on two things: replenishment and morale. When I’m in a situation when we’re short, I’m frequently telling my partners how awesome they’re doing, to just get through this, they’re doing the best in circumstances out of their control.
If your SM is anything like mine, it’s perfectly acceptable to tell customers you’re shortstaffed. The SMs are under orders and they have to comply.

Look for supplemental employment, especially temp agencies to build skills, networks, and confidence. Then find another job and put in your 2wks. It's a sinking ship and conditions won't improve.
