So this post is titled as “these customers” and then you say you’ve had one in two months complain.
Difficult customers exist. But this feels very baited because you’ve just had one bad experience. It’s not customers, it’s the one customer.
How do you handle it? Exactly as you did. “You’re definitely not required! There is a “no tip” option and you’re welcome to choose that ans your drink will be on the end for you!”
If they keep escalating then I just wait for them to get it out of their system before I say “absolutely I underhand! If you hit the “no tip” option you can move on to pay and your drink will be waiting on the end for you!”
Just move on and try not to let it spoil the hundreds of dollars that are tipped every week.
