So, I’ve put in my two weeks a bit ago, and my last day is January 1st. I have about 78 hours of protected sick time (I took maybe one sick day in 2.5 years of working here), and I know policy is that it can’t be traded in for cash, but do I really have to just lose over $1000 worth of hours because I never got sick??

Only some managers will allow it. Technically you can only use sick time for scheduled shifts. Way back in the day I took pto and got a Dr note for mental health. Used 80 hrs sick for 2 weeks and still had vaca.
