Best way to make an iced matcha with no foam(self.starbucksbaristas)

We had this woman come in and ask for a venti iced matcha with no foam and I had to remake it 4 different times to not get any foam and each time she was unhappy and wanted a remake. I've tried making in the cold foam pitcher, shaking without ice then adding ice after, etc. Please help with the best technique to get a no foam iced matcha.

When people complain about the foam, I make it for them using the original standard recipe.
¼” hot water, swirl the matcha in the hot water til you see no clumps, then milk and ice.
Edit: I should add that when the customers are NICE, I do this. If they’re rude about it I don’t use the old standard and just tell them “this is how they are made.”

Depending where you live, no dairy milk is allowed in the shaker to begin with. You can't add dairy to the shakers in Canada.

Girl same. Today was absolute hell. Line never stopped (we are a Drive Thru only), the walk up window was constantly busy, I have felt absolutely horrible all day, fever, headache, sore throat (covid test was negative).
How on EARTH are we supposed to "raise our customer connection score" when we are out of SO many things, half the holiday drinks are on shortage, not near enough partners working, etc.? I am so frustrated.

Step 1. Add water to shaker (Fill shaker to base line for all sizes) Step 2. Pump LC (Half dose pump) 3/4/6 for t/g/v Step 3. Scoop Matcha 2/3/4 t/g/v 4. Add Ice to ice line 5. Shake and pour 6. Finish with milk 1/4" below cup rim

Not the standard way - but what I do is if someone asks for no foam I measure in the shaker cup and put it in the foam blender. No foam and pours perfectly. But it’s tough to do when you’re getting slammed!

No lol it’s a shaken drink. Shaking it produces a certain amount of foam, same with refreshers, iced teas, all of that. She can ask for it shaken with no ice, and you can just put the ice in the cup and pour on top of it? But otherwise there’s always going to be foam. It’s how the drink works. It’s like when people want frappes with no ice or light ice. I tell them we can’t do that, and it’ll make the drink runny.
If there’s no standard for it then we can’t do it. There’s no standard for no foam shaken drinks. And no standard for a light ice or no ice frapp. There is standard for no foam lattes for example. If there’s no standard, then we can’t do it. That’s what I’d say in this situation

You can literally just strain out the foam as you pour it from the shaker. Let them know that they may have a few residual bubbles but the shaker lid works fine. Don’t make it hard on yourself.

When someone is being very specific but also wants something that you can’t make, just ask them how to make it. “How would you like me to do that?” Because no matter how they answer, you’ve just made it their fault now. Because either they tell you some specific way that they want you to do it, and even if they don’t like it, you can still say “I did exactly what you told me to do and you watched me do it.” Or, they tell you “don’t you know how to make it? I want it done the way it’s supposed to be done,” to which you can answer “yes.” When customers are particular like that I will always make it their responsibility to tell me not just what they want the final product to be like, but also tell me how I’m supposed to get it their. Because, I’m not gonna stand there and make ten different versions of their drink.
I had a customer complain that our coffee was too cold, but it was cold because she was filling half the cup with cream (back when we used to put the half & half carafe’s out in the condiment bar.) I noticed that and asked if she wanted steamed half and half instead, which she didn’t want. So I asked her “what do you want me to do?” I showed her that the coffee was steaming and even stuck a thermometer in it. A lot of customers aren’t there to have a good experience in the first place. They just want to have something to complain about to make themselves feel superior. They want you to make the same drink ten times because it makes them feel like you’re the problem and not them.

strike the side of the shaker pretty sharply and then let it sit a minute before you pour, that should get most of the trapped bubbles free. You can then pop the few that float to the top.
Also - try holding the ice back with the shaker lid while you pour into the cup, and pour slowly. Only let the ice tumble in once the cup is nearly full (and then just a few cubes at a time).
There is no foam, i think the word she is looking for is "no bubbles". Getting the bubbles "out" before you pour into the cup is the only practical solution, and that means paying attention to where the bubbles are and when/how they form.
PS- from experience, the shaken cold drink "no foam!" customers tend to be the most confusing, as they seem to know what they want but often don't have the words to convey it to you the barista in a mutually intelligible way.

This sounds crazy honestly it really does but I used to work for teavana and I have learned that if you put the TINIEST bit of hot water in the shaker, like just enough to wet the matcha powder and basically use a stirring stick to stir it up and then put the milk and ice in, it doesn't really mess with taste and will usually result in little to basically non existent foam. You can also put the hot water in and swirl it, it doesn't get rid of the clumps as nicely as the stir stick but it also works.

I shake it and then set down the shaker and let the foam settle. this will take time. Just leave it there, you can work on other drinks during this time or just wait. routinely remind the customer that “Im just letting the foam settle out! I didn’t forget ya!” and then after like 5 minutes, take a bar spoon and scoop out the foam. pour into a cup and top with more milk and ice and another removal of foam.

I shake it the way it's supposed to be and then I drain the liquid while holding back the ice, don't use the ice that was shaken in the shaker, get new ice and boom it's done. IF super picky, use bar spoon to scoop out any extra foam before u add new ice at the end

When I run it in the cold foam pitcher I only let it go long enough to mix, so I usually stop it after like 2 seconds and it’s usually not foamy. I also recommend maybe doing extra milk and then letting it sit for a second and maybe straining it with a spoon? That should do a good job if she’s that picky. I wish customers could understand were not gods, we can’t change the way liquid works 😂

The Canadian standard is: fill water to the base line on the shaker, add syrup, matcha and ice. Shake and pour into cup, then add milk to the top. There's no foam with this method.

I do one of two things. Either:
1) measure out the milk in the shaker, pour it in the foaming pitcher, add the matcha, and blend on 3 for literally 2-3 seconds (no more than that, it’s enough to incorporate it), pour in cup and add ice
2) put everything in the shaker and VERY LIGHTLY tilt the shaker back and forth a few times. Don’t shake it aggressively, or like normal. Gotta be slow and light. Pour it in the cup, strain with the shaker lid if I absolutely have to.

You can use the shaker lid to hold back the ice and foam and pour the liquid first. And then you just top it off with ice from the shaker, avoiding the foam obviously. Sometimes I’ll top it with a scoop of new ice instead of ice with the foam on it.

I have a regular that does this as well and she gets very mad about the foam. What we do is make it normally in the shaker then pour it into the cup and then use the spoon to scoop out most of the foam you can and just top it off with whatever milk they requested and she hasn't complained since
