i thought we weren’t allowed to do make it without ice or light ice anymore because it poses as a health risk to the barista making the drink?

We can still make it with light ice, but only if they order in person. The ice modifier was removed from shaken espressos in the app.

You are correct that we cannot make it with no ice anymore. Putting hot espresso in a shaker without any ice will cause pressure buildup due to the steam and can cause the shaker to explode.

Yea whenever they ask for light ice i just say “I’ll try to, as we’re not allowed to anymore” Usually it makes them feel better. I just put full scoop of ice instead of full scoop and lil above the line. I ain’t risking mah pretty face for your stupid drink!

We are still allowed to make it with light ice. I go one scoop size down for light ice. As long as they don't also get an extra shot, that's still enough to cool the espresso and prevent pressure buildup in my experience.

Since when has it been unless they order in person…? I’m pretty sure the weekly update that notified us about the change didn’t specify that.

At around the same time that the ability to order it with no ice was removed, the option to change the amount of ice in shaken espressos was removed from the app. Now, when you mobile order, you can't get no ice, light ice, or extra ice in a shaken espresso. We can still put in light ice or extra ice on the POS, though, so you can get them by ordering in person.

We can and should refuse to make it without ice even if a customer finds a way to mobile order it, since it's explicitly against standard now. It's dangerous to shake espresso without ice.

We STILL have a guy that got our DM involved after wanting a Venti No Ice Toasted Vanilla, and we were like, “we’re gonna have to stop making it for you, but today is the last day we’ll allow it” and god knows our DM called and complained that she had an upset customer trying to order something COMPLETELY reasonable, “if you can ring it in, you can make it”

When it first came out, one of my shifts forced me to shake the hot espresso and after it exploded on me I glared at him before walking away to deal with it, despite it being a busy weekend afternoon.

The POS might still let us ring it in, but it is now against standard for us to do it. At least in the US.

I’m not sure if this is right, but at my store we just shake it with ice and then use the shaker as a strainer and put either light ice or no ice on the top of the drink

My response is always- if u get light ice theirs going to be room in the cup so do u want room or extra milk - if the answer is extra milk I charge for the milk

you shouldn’t charge for the milk if they want extra, it already charges them for milk. For example, a standard shaken espresso made with oatmilk will have a .70 charge for nondairy, and the BOSE/TVSE/CASE already include the nondairy charge. If they’re already paying for milk they’re allowed to get it topped with extra milk (for light ice shaken espressos). we are no longer allowed to do shaken espressos with no ice, it’s corporate policy

there is no proper way anymore, corporate specifically stated that we are no longer offering a “no ice” option for shaken espressos. if someone asks for no ice tell them you can’t since it’s against policy, and have them order a latte instead lol

I always tell people it is impossible, when they ask why I'll delve into the physics as to why it will build pressure then proceed to POP in the barista's face. By the time I'm done talking, the customer will have decided on something else to drink.

Then just order an iced latte with no ice because that’s what you’re getting. It’s not faster, if I do it according to standard I can pour it from the shaker while getting the milk out and ready to pour, if I strain the shaker I have to stop and concentrate using both hands to not let any ice get in, god forbid a customer encounter an ice cube in a drink MADE WITH ICE. You’re literally wasting time putting ice in the shaker only to strain it out. There’s no purpose in ordering it without ice.

It’s against standards. We aren’t allowed to do this. It’s the same as a no-ice latte once you filter out all the ice and foam with the lid, just with way more wasted time.

Yeah, it’s a no-ice latte with modifications. That doesn’t change that we can’t make shaken espressos with no ice. It was always a waste of time, even when we could do this.

Yeah that's what I thought, too. It happened to me twice, people were like I want it to be iced, but without the ice and I was like, ok then I will shake it and then strain in. Simple.
